This is a banging recipe – but you can use any recipe you like. All the flavours really enhance any pancake.. whether it’s a crepe of American style.



Melted butter/ coconut oil/ sunflower oil
Drizzle
Egg (or flax egg)
1 egg
Self raising flour (can use GF) 90g
Unsweetened almond milk (or alternative) 90ml
Baking powder 1/2 tsp
Salt Small pinch


Put the sachet, flour, baking powder, milk, egg and a small pinch of salt in a bowl or jug. Whisk vigorously with a fork or whisk until you have a smooth batter with no lumps.
Lightly grease a large non-stick frying pan with melted butter/ coconut oil or sunflower oil (you want the pan to be well covered but without excess oil)
Heat the pan for about 30 seconds on a medium/high heat until its warm then pour or ladle the batter into the pan- you'll make three pancakes
Cook the pancakes on a med/high heat for 1 and a half to 2 minutes each side, flipping with a spatula or pallet knife. You want them slightly coloured and puffed up.
